Ned Goodwin for Halliday Wine Companion: “A late-disgorged wine based on the cool ’11 vintage. A whopping decade on lees, with an intriguing dosage (4.75g/L) comprised of barrel-fermented chardonnay and a dollop of brandy spirit. This will age further in bottle. Already toasty, creamy and broad, exuding riffs of orange blossom, quince, raw pistachio, nashi pear and brioche. The finish, long, detailed and vibrant. Thoroughly convincing”

Our Blanc de Blancs is 100% Chardonnay and spends 10 years in the bottles before release. 2011 has gone down in history as one of the wettest and coldest vintages on record, and as a result our sparkling fruit shone. After 10 years in the bottle our Blanc de Blancs has retained its vibrant acidity, but the bready – brioche characters makes this wine a standout. It shows a creamy, toasty palate with green apples, lemon and cashew. The tiny addition of brandy in the dosage offers a depth and richness that makes this wine one to savour.

The Orange Region excels at Chardonnay so it is no surprise that the pinnacle of the Swift range is a Blanc de Blancs – 100% Chardonnay. A cool, wet growing season – fantastic for sparkling wine. Hand picked. Two things stand out – the purity of the fruit and the complexity after 10 years on lees. Aromas leap out of the glass. The palate is scintillating with acidity and tension. There is also richness and depth. This can only be achieved with patience. After 10 years the yeast from the secondary bottle fermentation have just about given everything they have to give. The more sophisticated dosage liqueur adds a new layer of texture.

Wine Cellaring

After 10 years of lees ageing this wine has developed incredible complexity due to the yeast lees contact in bottle. Now that it has been disgorged it will continue develop but down a different road – more along the lines of typical bottle maturation. The freshness of the wine is fantastic. It will continue to drink well for at least another 10 years (to 2030).
